Lavender French 75

The elevated one. Gin, lemon and lavender syrup lengthened with sparkling wine. The dinner-party pour.

Ingredients

Makes 1 drink

  • 1.5 oz gin
  • 0.5 oz lavender simple syrup
  • 0.5 oz fresh lemon juice
  • Sparkling wine, to top
  • Lemon twist, to garnish

Method

  1. Add the gin, lavender syrup and lemon juice to a shaker with ice.
  2. Shake until cold and strain into a chilled flute or coupe.
  3. Top with sparkling wine.
  4. Express a lemon twist over the top and drop it in.

The French 75 is the lavender cocktail to pour when you want to feel a little fancy. In wine country it almost makes itself: a local sparkling wine, a good gin and a measure of lavender syrup.

Use a dry sparkling wine so the drink finishes crisp rather than sweet. Start from a batch of lavender simple syrup or a bottle of Bench & Bloom.

Skip the steeping. Ours is already dialled in.
