Gin
Lavender Tom Collins
The long, easy gin highball. Gin, lemon, lavender syrup and soda over ice, blooming pink as you stir.
Ingredients
- 2 oz gin
- 1 oz fresh lemon juice
- 0.75 oz Bench & Bloom lavender syrup
- Soda water, to top
- Ice and a lemon wheel
Method
- Build the gin, lemon and lavender syrup in an ice-filled tall glass.
- Top with soda water and stir. The lemon turns it pink as you go.
- Garnish with a lemon wheel.
The Tom Collins is the simplest way to a long, refreshing lavender drink: gin, lemon, syrup, soda, built right in the glass. The lemon does double duty here, brightening the lavender and blooming the colour to pink.
