Lavender Tom Collins

The long, easy gin highball. Gin, lemon, lavender syrup and soda over ice, blooming pink as you stir.

Ingredients

Makes 1 drink

  • 2 oz gin
  • 1 oz fresh lemon juice
  • 0.75 oz Bench & Bloom lavender syrup
  • Soda water, to top
  • Ice and a lemon wheel

Method

  1. Build the gin, lemon and lavender syrup in an ice-filled tall glass.
  2. Top with soda water and stir. The lemon turns it pink as you go.
  3. Garnish with a lemon wheel.

The Tom Collins is the simplest way to a long, refreshing lavender drink: gin, lemon, syrup, soda, built right in the glass. The lemon does double duty here, brightening the lavender and blooming the colour to pink.
