The Bench Spritz

Wine country in a glass. Sparkling wine, lavender syrup and soda, blooming soft pink. The Naramata Bench patio pour.

Ingredients

Makes 1 drink

  • 3 oz dry sparkling wine
  • 0.75 oz Bench & Bloom lavender syrup
  • 1 oz soda water
  • Ice and a lemon twist

Method

  1. Fill a wine glass with ice. Add the lavender syrup and the soda.
  2. Top with sparkling wine. The acidity turns it a soft pink.
  3. Stir gently and garnish with a lemon twist.

The Naramata Bench is forty-odd wineries above the lake, so a spritz here almost makes itself: a local dry sparkling wine, a measure of lavender syrup and a splash of soda. The wine’s acidity blooms the syrup to a soft pink, so it arrives at the table already the colour of the bench at golden hour.

Use a dry sparkling so it finishes crisp. Start from a bottle of Bench & Bloom or a batch of lavender simple syrup.

Skip the steeping. Ours is already dialled in.
